1.5 c buttter, softened
1 c white sugar
1 c confectioner’s sugar
4 eggs
2 tsp vanilla
5 c all-purpose flour
2 tsp baking powder
1 tsp salt
*i like to add about 1-2 tbsp of lemon zest just to up flavor, butt not necessary at all
- cream together butter and sugar until smooth
- beat in eggs and vanilla
- sift in flour, baking powder and salt
- cover and chill the dough for at least one hour (till firm)
- heat oven to 400 F when ready to bake
- roll dough out on (powder) sugared surface (1/4 inch for a crunchier cookie, 1/2 inch for a chewier cookie)
- place cookies 1 inch apart on ungreased cookie sheets (parchment paper is helpful)
- bake 6-8 minutes, then cool completely
frost and decorate to your heart’s desire :)
